3-Step Jambalaya

Made this for dinner lastnight.The pot was empty by the time it was over.It was a big hit in our house.Even for my picky eaters who tried to turn their noses up to it.Tyler loved the sausage.Hope someone can enjoy this.

1) In large saucepan over high heat, saute for 5 minutes:
2 Tbsp.butter or margarine
Rice from 1 (6.8 oz) pkg. of Rice-A-Roni Spanish Rice
1 minced garlic clove------- I left this out
1/2 cup chopped onion
3/4 cup bell pepper ( any variety)

2) Mix in and bring to a boil:
2 cups of water
1 (14.5 oz) can diced tomatoes (drained)
Rice-A-Roni seasoning
1 pkg. Hillshire Farm Smoked Sausage cut into 1/4 in slices

3) Final Steps:
Lower heat,cover and simmer for 20 minutes or untill rice is cooked.
Remove from heat and stir.Add hot sauce to taste.

Makes 4 servings

6 more months

Update on Tylers legs: We went to the ped. ortho and nothing has changed.He had him walk around the halls while he hung back and watched.His left foot turns slightly to the right and the right foot is slightly to the left.So he walks on the outsides of his feet.He said with most kids it fixes itself as they get more active.He can play sports but might have a hard time with hockey.I know it broke Matt's heart to hear that.So back in 6 more months for another follow up.

Miss me?

I have really been neglecting my blog here.So much has changed.It seems the storms have passed and God is shining down on us.We are finally getting the money we need to get back on our feet.It feels great not having to worry to much about bills and such.I finally stuck it to my ex and he will be paying me $7000 in back child support.I'm so happy about that.And seem the IRS has made a boo boo and they owe ME more money.Things are really starting to fall back into place.Me and Matt have been working really hard on our relationship and doing such a great job.He's been working so hard on his sobriety,I'm just so proud of him.He deserves this,we all do.It's not a easy road to travel,but I'm there with him to help him along his way to regaining control over his life.I got a new phone too.Wanna hear the store?Too bad here it is.Got my tax money back and decided we both needed a phone,since Matt already had one we needed to get just me one.We went to a Revol store,one were weren't to familar with,but it was getting late and I really wanted a new phone.They had a LG cam phone on sale for $75,15 days free.Ok get it,everything is great.Five days later the thing goes into Carkit mode and I can't make any calls.Just texts.We call the store and she puts me on hold only to hang up on me.Try calling back and well she would not answer.We called a different Revol and they informed us that they got shut down by Revol for dealing faulting phones under the Revol name.Geez wish I would have known that.So Matt not being to happy that we just got ripped off by someone posing as a Revol dealer went to the Revol we know,and pitched a bitch.The guy told him that since it was not a Revol phone they couldn't do anything about it,Matt was not buying it.So the guy calls corporate and they said to call back on Monday(this was Friday).Monday comes around and Matt calls back up there,good news corporate gave the ok to replace it.Yay!! When we picked up the phone turns out they gave me a $200 Motorola E815.It's a pimp ass phone,lol.I love the pictures it takes and it has a video camera.I'm just really glad I didn't get stuck with a old rotten phone.The phone they sold me to begin with was all corroded inside.That's why it locked up.Annnnnyways here are some pictures I took with my new toy.Hope you all enjoy.Please feel free to comment,let me know I'm being heard.

Thanksgiving Vacation

It was great.We went down to my FIL's in West Virgina.Kids had a blast and Lynn (MIL) was the best host.She made a wonderful dinner,and each and everynight we were there.We got back lastnight.I really enjoyed the lastday we were there.We all (me,the kids-Tyler,Matt,and Jeremy) played a really fun game of soccer.I was goalie,and was really impressed with my skills.I'm paying for it today,but it was well worth it to get out here with my kids and play.The drive home was great.Couldn't have asked for a better drive.There was no traffic,and I drove most of the way.I enjoy highway driving like that,but my legs didn't.On our way down there we saw a really bad accident.I prayed they were all ok,but there was some serious injuries.That's why it's so important to pay attention on those mountains.Tyler didn't handle the drive very well.Down there was OK,but coming back,it was really rough.Matt took me for a ride in his dads new Vette.It was awesome.Kids went for a ride to.Really made their day.All in all it was a great trip.Here are some pictures.Hope all your hoildays were safe and wonderful.

Just one of those days

Oh I hate day's like this.I hate how one comment from one person can break me down.A comment from someone I love makes it worst.Just when I was able to hold my head high and be proud of who I was,I get knocked down.So many emotions are flying around in my head.Makes it hard for me to stand still at times.Did he mean what he said?Was it out of anger?If it was then he must have meant it somewhere deep down inside himself,right?Of all the words that flew back and forth it was those five little words that cut me so deep.It's so hard to take them back.To forget and forgive.I want to forget more than anything.I want to pretend it was all a dream,but my dreams are empty these days.How do you forgive someone?Do you just say ok,and move on as if it had never happened?Am I that strong?I'm sure I am.Deep down I will find my inner strength again.Never again will I let him get that close to hurt me again.Never again will anyone break me the way he has.Never again!!!!

PREGNANT TURKEY STORY

One year at Thanksgiving, my mom went to my sister's house for thetraditional feast. Knowing how gullible my sister is, my mom decided to playa trick.
She told my sister that she needed something from the store.
When my sister left, my mom took the turkey out of the oven, removed thestuffing, stuffed a Cornish hen, and inserted it into the turkey, andre-stuffed the turkey. She then placed the bird(s) back in the oven.
When it was time for dinner, my sister pulled the turkey out of the oven andproceeded to remove the stuffing. When her serving spoon hit something, shereached in and pulled out the little bird.
With a look of total shock on her face, my mother exclaimed, "Patricia,you've cooked a pregnant bird!" At the reality of this horrifyingnews, mysister started to cry.
It took the family two hours to convince her that turkeys lay eggs!
